Island Ribs w/ Rice: Date Added: 29 Jul 2011

4 pounds country-style pork ribs
Salt and seasoned pepper
1 7-3/4-ounce jar junior peaches OR 1 cup pureed canned peaches
1/2 cup chili sauce or catsup
1/2 cup cider vinegar
3 tablespoons soy sauce
1/4 cup firmly packed brown sugar
3 cloves garlic, crushed
1 tablespoon ground ginger
3 cups hot cooked rice

Cooking Instructions

Servings: Makes 4 servings

1. Rub ribs on all sides with salt and seasoned pepper. Place ribs, meaty side down, in foil-lined pan. Bake at 450 degrees 20 minutes. Spoon off excess fat. Turn ribs meat side up.
2. Blend peaches, chili sauce, vinegar, soy sauce, brown sugar, garlic and ginger; pour over ribs. Cover; reduce heat to 350 degrees and bake 1-1/2 hours or until tender.
3. Remove cover 20 minutes before ribs are done so meat can brown. Baste with sauce several times while browning. Serve ribs and sauce with fluffy rice.

Cooking Tip: Pork spare ribs or back ribs may also be used
