Chipotle Butter: Date Added: 28 Jul 2011

Ingredients

1/4 lb. (1 stick) butter, softened
2 Tbsp. minced shallots
1 Tbsp. minced fresh cilantro
1 Tbsp. minced chipotle peppers in adobo sauce
1 Tbsp. fresh lime juice
1/2 tsp. salt

Cooking Instructions

1. Combine 1/4 lb. butter, shallots, cilantro, chipotle peppers, lime juice and salt in small mixer bowl; beat on high speed until light and fluffy. Set aside.

2. Heat 1/2 Tbsp. butter in large nonstick skillet over medium-high heat until hot.

3. Cooking Tip: Chipotle butter can be prepared up to 2 days in advance. Shape into a roll and wrap in plastic wrap. Refrigerate.

4. To use, cut crosswise into thin slices.
